  • 1 cup creamy peanut butter Preferably natural peanut butter without added sugar.
  • 1 cup granulated sugar Essential for melt-in-your-mouth texture.
  • 1 large egg Helps bind the ingredients together.
  • 1 teaspoon vanilla extract Enhances the flavor profile.
  • 1/2 teaspoon baking soda Helps the cookies rise perfectly.
  • 1/4 teaspoon salt Balances the sweetness.

For the Filling

  • 1 cup chocolate chips Semi-sweet or milk chocolate variant.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine peanut butter and sugar using an electric mixer or by hand until creamy.
  • Add the egg and vanilla extract to the mixture and blend until combined.
  • In a separate small bowl, whisk together baking soda and salt, then add gradually to the peanut butter mixture. Mix until just combined.
  • Cover the dough and chill in the refrigerator for about 20-30 minutes.

Baking

  • Scoop dough onto a baking sheet lined with parchment paper, spacing them about two inches apart.
  • Melt the chocolate chips in the microwave, stirring every 20 seconds until smooth.
  • Press your thumb into the center of each dough ball to make a well, and spoon melted chocolate into the center.
  • Bake for 9-11 minutes, until edges are lightly golden but centers remain soft.
  • Allow cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Don’t overbake to maintain softness. Store in an airtight container at room temperature for up to a week. These cookies improve in flavor when made a day ahead.
