Instructions
 

Preparation

  • In a large pot or Dutch oven, heat olive oil over medium heat.
  • Add diced onion and sauté for about five minutes until softened.
  • Stir in minced garlic and diced jalapeños, and cook for another couple of minutes.
  • Add chicken breasts and pour in chicken broth to cover them.
  • Bring to a boil, then reduce heat and let simmer for about 15 minutes.

Cooking

  • Remove the chicken, shred it into bite-sized pieces, then return to the pot.
  • Stir in heavy cream, ground cumin, and paprika, and season with salt and pepper.
  • Mix in softened cream cheese until melted, followed by the shredded cheddar cheese.
  • Optional: Fold in crumbled turkey bacon for extra flavor.
  • Let soup simmer for an additional five minutes.

Serving

  • Ladle the soup into bowls and garnish with fresh cilantro.
  • Enjoy with your favorite bread or as part of a cozy movie night.
