For the Chicken

  • 1 whole whole chicken (cut into pieces) Fresh chicken is preferred for better flavor and crispy skin.
  • 2 tbsp olive oil Healthy oil that aids in achieving a crispy finish; avocado oil can be used as an alternative.

For the Marinade

  • 2 tbsp paprika Provides smokiness; smoked paprika is recommended for extra depth.
  • 1 tbsp cayenne pepper Adjust according to heat preference.
  • 1 tbsp garlic powder Adds warmth and depth.
  • 1 tsp onion powder Fills in gaps with sweetness.
  • 1 tsp black pepper Essential seasoning.
  • 1 tsp salt Essential for flavor enhancement.
  • 1 tbsp lemon juice Brightens the dish.
  • 1 tbsp soy sauce Adds umami richness.
  • 1 tbsp tomato paste Optional; adds color and richness.

Instructions
 

Preparation

  • Clean and pat dry the chicken pieces.
  • In a large bowl, mix together olive oil, paprika, cayenne pepper, garlic powder, onion powder, black pepper, salt, lemon juice, soy sauce, and tomato paste (if using).
  • Toss the chicken pieces in the spice mixture until thoroughly coated.
  • Cover the bowl with plastic wrap and marinate in the fridge for at least 1 hour, preferably overnight.

Cooking

  • Preheat the oven to 200°C (400°F). Prepare the baking tray with non-stick spray or olive oil.
  • Arrange the chicken pieces on the baking tray, leaving space between them.
  • Roast for 40-45 minutes, flipping halfway for even cooking.
  • Once golden brown and crispy, let the chicken rest for a minute before serving.

Notes

For best results, let the chicken come to room temperature before roasting. Use a meat thermometer to ensure chicken reaches 75°C (165°F).
