Preparation of Strawberry Sauce

  • In a small saucepan over medium heat, combine diced fresh strawberries, granulated sugar, and lemon juice.
  • Cook for about 10 minutes until slightly thickened, stirring occasionally.
  • Remove from heat and cool completely before using.

Making the Cheesecake Filling

  • Beat softened cream cheese in a large mixing bowl until smooth.
  • Add in powdered sugar and vanilla extract, mix until creamy.
  • In another bowl, whip heavy cream until stiff peaks form.
  • Gently fold whipped cream into the cream cheese mixture until combined.

Assembly

  • In a shallow dish, mix crushed vanilla wafer cookies with crushed freeze-dried strawberries.
  • Fill waffle cones halfway with cheesecake filling, then add a spoonful of cooled strawberry sauce.
  • Fill the rest of the cone with the remaining cheesecake mixture.
  • Roll the tops in the crunchy mixture and press gently to secure.
  • Place cones in a tall glass or cone holder and refrigerate for at least one hour.

Notes

Use fresh strawberries for best results. Keep the filling from getting too close to the cone's edge to maintain crunch. Make ahead up to a day before and store in the fridge.
