Preparation

  • Preheat your broiler to ensure the vegetables blister nicely.
  • Chop the pineapple, tomatillos, onion, and garlic.
  • Arrange the chopped ingredients on a baking sheet. Optionally, sprinkle with fresh cilantro for additional flavor.

Cooking

  • Broil for 5-7 minutes, keeping an eye on them to avoid burning.
  • Let the ingredients cool slightly before handling.

Blending

  • Combine the broiled ingredients, chipotle peppers, and a pinch of salt in a blender.
  • Blend until you reach your desired consistency, aiming for a bit of chunkiness.

Finalizing

  • Taste and adjust seasoning with lime juice and more salt as needed.

Notes

This salsa can be made ahead of time and keeps well in the fridge for about three days. It also freezes well for up to a month. Always stir before using if separated.
