  • 2 teaspoons sugar Balances out the saltiness in the sauces.
  • 2 cloves garlic, minced Because garlic makes everything better.
  • 2 small red chilies, thinly sliced For those who enjoy a kick.
  • 1 cup fresh basil leaves Thai basil adds a slightly spicy anise flavor.
  • 8 pieces rice paper wrappers These beauties hold everything together.
  • 1/2 cup cucumber, julienned For a refreshing crunch.
  • 1/2 cup shredded carrots Adds color and sweetness.
  • 1/4 cup fresh cilantro leaves For a burst of fresh flavor.
  • 1 tablespoon lime juice A spritz of citrus that brightens everything up.
  • 1 tablespoon hoisin sauce For a drizzle of sweetness to finish it off.

Instructions
 

Cooking

  • Heat a large skillet over medium-high heat.
  • Pour in the vegetable oil and wait for it to shimmer.
  • Add minced garlic and sliced red chilies; stir until fragrant.
  • Brown the ground beef for about 5-7 minutes until fully cooked.
  • Stir in soy sauce, oyster sauce, fish sauce, and sugar; cook for 2-3 minutes until thickened.
  • Stir in fresh basil leaves and remove from heat.
  • Allow the beef mixture to cool slightly.
  • Soften each rice paper wrapper in warm water for 5-10 seconds and lay flat on a damp towel.
  • Place a portion of the beef mixture in the center, along with cucumber, carrots, cilantro, lime juice, and hoisin sauce.
  • Fold in the sides and roll tightly, repeating until all mixtures are used.

Notes

For the best results, work on a damp surface, and don’t overload the rice paper wrappers with filling. These rolls can be stored in the fridge for about 3 days.
