Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  • In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  • In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg, vanilla extract, and brewed coffee until smooth.
  • Gradually mix in your dry ingredients until just combined.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheet, keeping a few inches apart.

Baking

  • Bake the cookies for 12-15 minutes until just set but still soft in the center.
  • Allow the cookies to cool completely on a wire rack.

Filling Assembly

  • Whip together the mascarpone cheese, heavy cream, and powdered sugar until smooth.
  • Spread a dollop of mascarpone filling on the flat side of one cookie and top with another cookie.
  • Dust with cocoa powder using a fine sieve for presentation.

Notes

Use room temperature ingredients for best results. Store in an airtight container in the fridge for up to a week. They taste even better after a day as the flavors meld together.
