  • 8 oz mascarpone cheese The creamy base of the truffles.
  • 1 cup brewed espresso, cooled Adds the signature coffee flavor.
  • 1 cup chocolate cookies, crushed Provides the necessary crunch.
  • 1/2 cup powdered sugar Balances the bold coffee flavor.
  • 1 teaspoon vanilla extract Enhances overall flavor.
  • 1 pinch salt Amplifies flavors.
  • 1/2 cup cocoa powder or melted chocolate for coating Provides richness and a beautiful finish.

Preparation

  • In a medium-sized mixing bowl, combine the mascarpone cheese and cooled espresso.
  • Add the crushed chocolate cookies and powdered sugar, followed by the vanilla extract and salt.
  • Using a spatula, mix everything until well combined. The texture should be slightly sticky but not overly wet.
  • Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  • Once chilled, scoop out small portions of the mixture and roll them into bite-sized balls.
  • Roll the truffles in cocoa powder or dip them in melted chocolate.
  • Place the truffles on a baking sheet lined with parchment paper and refrigerate until firm.
  • Serve chilled and enjoy!

Notes

Chill the mixture to make rolling easier. Substitute chocolate cookies with graham crackers if needed. Add orange zest for a citrus twist or a tablespoon of coffee liqueur for an extra kick.
