  • 8 oz spaghetti Whole grain or gluten-free preferred
  • 2 cups cooked chicken, shredded Use leftovers for ease
  • 8 oz cream cheese Provides creaminess
  • 1 cup cheddar cheese, shredded Use sharp cheddar for flavor
  • 1 cup chicken broth Low-sodium recommended

Seasonings

  • 1 tsp garlic powder Adjust to taste
  • 1 tsp onion powder Adds sweetness
  • to taste salt and pepper Essential for flavor

Optional ingredients

  • 1 cup bell peppers, diced Add color and crunch
  • 1 cup mushrooms, sliced Provides earthy flavor

Instructions
 

Cooking the spaghetti

  • Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  • Drain the spaghetti and rinse under cold water.

Making the cheese sauce

  • In a large saucepan over medium heat, combine cream cheese, cheddar cheese, and chicken broth. Stir until melted and smooth.
  • If the sauce is too thick, add a splash more chicken broth.

Combining ingredients

  • Add the shredded chicken and seasonings to the cheese sauce. Mix well.
  • If using, add sautéed bell peppers and mushrooms, stirring to combine.

Serving

  • Mix the cooked spaghetti into the cheese and chicken mixture until well combined.
  • Serve hot and enjoy!

Notes

For best results, cook pasta to al dente and store leftovers in an airtight container for 3-4 days. Can prep ahead of time and freeze for up to 3 months.
